The Caramel Tree, in Latin Cercidiphyllum japonicum, is a splendid deciduous tree, appreciated for its foliage with changing colours, and famous for the scent of caramel or gingerbread that its leaves emit when they fall in autumn. Originally from Japan, hardy and tolerant, it prefers deep, moist, humus-rich, and slightly acidic soils that promote beautiful autumn colours. Horticulturists have focused on this beautiful species and have selected original forms, such as the Cercidiphyllum japonicum 'Pendulum', with a weeping and more compact habit, or the variety 'Rotfuchs', even more colourful than the original species. Resistant to pollution, it has its place in urban gardens, either as a solitary tree or in the background of lower groups of shrubs. We enjoy its delicious scent, which is particularly noticeable in the late afternoon, on a warm and sunny day!
