Kohl rabi - Brassica oleracea var. gongylodes - is consumed for its stem forming a spherical and rounded prominence at its base, resembling a root. Its seeds are sown in spring for a harvest in late autumn. It can be stored all winter in sand. This vegetable, which fell into disuse due to wartime shortages, is gradually regaining its place on our tables, such as the White Vienna Kohl rabi. This is good news because when eaten raw, it has the flavour of chestnut or hazelnut combined with that of radish. When cooked, it resembles the delicate taste of turnip. Regular consumption of kohl rabi is said to prevent cardiovascular diseases.
