Lamb's Lettuce, also known as Corn Salad, is a herbaceous vegetable cultivated for its leaves. It has a delicate flavour and is consumed alongside lettuce, endives, and arugula in mescluns. It is essentially a wild salad with a spatulate, rosette-like, tender, and fleshy foliage. The seeds are sown from August to October for harvesting from autumn to the end of winter. Varieties with large seeds have larger leaves but are less hardy. Lamb's Lettuce is rich in vitamin C, vitamin E, iron, and beta-carotene.
