Kale - Brassica oleracea acephala sabellica - from the Brassicaceae family, known as Curly kale, Black kale or Lacinato kale, is a herbaceous plant grown in vegetable gardens for its leaves. Its very tall habit and its wavy leaves without a head allow it to occasionally be displayed in ornamental gardens. A winter vegetable, it is often accompanied by carrots, potatoes, and leeks in soups or pot-au-feu. It can be eaten raw in julienne in salads or fermented. Kale, like all cabbages, is remarkably low in calories but rich in vitamins K, A, and C, and calcium.
