Courgettes – Curcurbita pepo – from the Cucurbitaceae family is a fruit consumed as a vegetable and harvested while still young when the skin is still tender. Often cylindrical, it can also be spherical like the Round Zucchini from Nice. Symbolic of summer, Courgettes are used in many Mediterranean recipes such as ratatouille, caponata, and couscous. It can be consumed in gratins, soups, braised dishes, generally cooked but sometimes raw and grated. Its male flowers – the ones that do not produce fruit – are prepared as fritters. Courgettes are low in calories but rich in vitamins, particularly provitamin A, B vitamins, and minerals.
