Our selection of Mertensia. The oyster leaf, vegetable oyster or Mertensia maritima, is an edible and ornamental perennial plant with marine flavors. It appeals to gardening enthusiasts as well as gourmets. This small coastal plant, known for its iodine flavor, produces delicate blue-green foliage and sky-blue bell-shaped flowers. Its cousin, the Mertensia virginica, also known as the Virginia bluebells, brightens shaded areas with its lavender bells. Less known, the Mertensia sibirica thrives in cool and humid climates.
Native to northern shores, Mertensia belongs to the Boraginaceae family, like the borage and the forget-me-nots. This plant reaches 15 to 30 cm in height depending on the varieties and has fleshy foliage.
