First early potatoes are varieties that are harvested between 90 and 110 days of growth, such as BF 15, Bernadette or Chérie for example. The tubers of these varieties can be harvested early, before full ripeness, or at full ripeness. New potatoes should be consumed quickly, while mature tubers can be stored for a few weeks in a cool and dark place. Plant the tubers from mid-March to May depending on the climate and harvest approximately 110 days after planting. For an early crop, plant from February-March under cover and harvest 70 days after planting.
