The Eggplant of the Solanaceae family is a vegetable-fruit that is generally deep violet and is often cultivated alongside other Southern vegetables, such as peppers and chillies. The plants are transplanted when the last frosts are no longer to be feared, from April to June depending on the region. Easy to grow, the Eggplant with its bushy habit is nevertheless demanding in terms of heat and brightness. It requires a lot of water to produce its beautiful fleshy fruits. Space your plants at least 50cm (20in) apart in all directions. This sun-loving vegetable is rich in fibre and B vitamins.
