The Aubergine – Solanum melongena – from the Solanaceae family, is a vegetable-fruit that is generally deep purple and has lent its name to a colour. This is true for the Barbentane Aubergine, but some varieties are white, variegated, pink, green or black, and they come in various shapes: ovoid, long or spherical. Easy to grow, the plant has a bushy habit and requires heat and bright light. It needs plenty of water to produce its beautiful fleshy fruits with a subtle flavour. This highly prized Mediterranean vegetable is the main ingredient in Greek moussaka, Lebanese baba ganoush, and many other dips and dishes. The Eggplant (as it is known to people in the USA) is rich in fibre and B vitamins, including B1 and B6.
