The Plum tree - Prunus domestica - is a fruit tree that includes 3 major families:

- The greengages form round and globose fruits with a thin skin, yellow or purple depending on the varieties, with juicy and sweet greenish flesh. It is the most common table plum.

- The quetsche have an elongated ovoid shape, purplish or bluish-black with a whitish bloom-covered skin, protecting a firm and highly flavoured flesh. The quetsche is consumed fresh, in jams, as well as in pies and cakes.

- The round mirabelles are yellow or orange, sometimes tinged with red or brown, and are very fragrant. They are consumed fresh but are especially appreciated in pies and cakes, as well as for making fruit brandies.
