Early sowings allow spring harvests to be advanced by a few weeks and also produce early vegetables, known as "new" vegetables: carrots, turnips, lettuce salads, peas, radishes... These young vegetables are highly appreciated in late spring. These early year sowings are generally done in February - March, in unheated shelter. Many varieties, such as the 'Rouge plat hâtif' turnip or the 'très hâtif d'Annonay' dwarf pea with smooth grains, are particularly well suited to this method of cultivation.
