Celery - Apium graveolens - is a vegetable that comes in three forms: Celeriac grown for its fleshy root like Monarch Celeriac, Stem Celery, often just called Celery, for its stalks and finely cut leaves, and Leaf Celery as a herb like parsley. All three have their origins in Marsh Parsley or Marsh Celery. It is a perennial plant known for its detoxifying and antioxidant properties. Celeries are vegetables that are harvested in autumn and winter, and their plants are transplanted from May to June. All of them are very hardy. Celeries thrive in moist, light, and nutrient-rich soil.
