Jerusalem artichokes – Helianthus tuberosus, from the Asteraceae family, are perennial root vegetables cultivated their somewhat misshapen tubers. This root vegetable also produces attractive sun-yellow flowers similar to sunflowers, which it is closely related to. This ancient tuber is being rediscovered thanks to its delicate artichoke-like flavour, which can be prepared for baking as gratins, velvety soups, sautéed, or cooled and sliced in mixed salads, etc. They are rich in phosphorus and potassium, B-group vitamins, and do not contain starch.
