The TurnipBrassica rapa – from the Brassicaceae family is cultivated for its round, long, semi-long, or flat root. Its colour varies from white like the Winter Hardy White Turnip, yellow, pink to violet or even black. Its very delicate taste has long been associated with a lack of flavour, yet it is found in very tasty recipes such as purées, preserves, and pot-au-feu accompanied by potatoes, carrots, and leeks. It can also be used in dessert with a twist on the Tarte Tatin. The Turnip has diuretic, refreshing and remineralising properties and contains numerous vitamins.
