Asparagus crowns are underground stumps from which emerge the shoots, which can be harvested from the 3rd to the 4th year of production. White varieties like the famous Argenteuil asparagus, as well as green or purple ones, are to be planted in sandy soil where they will be easy to cultivate and harvest. Asparagus plants do not tolerate heavy, cold, and wet soils.
