Belonging to the Chenopodiaceae family , Orache, cultivated orache, or even mountain spinach is an ancient herbaceous plant widely cultivated in the Middle Ages. This leafy vegetable has been replaced by spinach but it is grown and prepared in a similar way in cooking. This highly remineralising plant is gradually being rediscovered. With different colours, it grows up to 2m (7ft) with astonishing speed and is distinguished by its triangular leaves in the shape of a halberd. Easy to grow, Orache is sown in April and thrives in poor soil and performs remarkably well during episodes of high heat.
