Sweetcorn - Zea mays - from the family Poaceae formerly Gramineae is cultivated in vegetable gardens for its grains gathered in cobs. This robust cereal requires abundant water and heat for its rapid growth. The 'Golden Bantam' Sweetcorn with its sweet flavour can be harvested as early as July when the bristly silk enveloping the cob turns brown. The grain is then mature and can be harvested. To ensure this, it should remain slightly milky when crushed. Afterwards, the sugar transforms into starch and the skin hardens and wrinkles. Sweetcorn has a moderate glycemic index and is rich in B vitamins, C vitamins, and minerals.
