The Carrot (Daucus carota) is a root vegetable to be sown in the vegetable garden from February for a harvest in summer until autumn. The seeds of this Apiaceae germinate 25 days after sowing. This orange-coloured root vegetable has varieties with purple, yellow, or red skin and flesh. Very hardy, carrots can be stored in dry sand in the dark.
