The Carrot (Daucus carota) is a root vegetable to be sown in the vegetable garden from February for a harvest in summer until autumn. The seeds of this Apiaceae germinate 25 days after sowing. This orange-coloured root vegetable has varieties with purple, yellow, or red skin and flesh. Very hardy, carrots can be stored in dry sand in the dark. Among the best varieties, you will find the Carentan Carrot, the Nantes Carrot, the Colmar Carrot with red heart, or the Rothild variety.
