The Cardoon - Cynara cardunculus – is a biennial vegetable plant grown for the stems of its foliage. Unjustly forgotten, the plant itself is very decorative: it has very characteristic, highly dissected foliage which is a grey-blue or silvery colour and it produces large indigo to violet thistles. To eat it, the stem must have been previously blanched. Mound up around the base with 25 to 30 cm (10 to 12in) of soil to stabilize the plant. The foliage of the Cardoon is slightly spiny, except for the foliage of the Spineless Full White Cardoon. Get your gloves ready for harvesting.
