Rhubarb – a species of Rheum – from the Polygonaceae family, is a perennial and very hardy vegetable plant that produces large leaves in spring. This vegetable is cultivated for its petiole or stalk. Renowned for its acidic flavour, it is cooked to make jams or pies. This large growing plant, (even more so for the Giant Rhubarb Victoria), is decorative and can be sown in April and harvested as needed. The germination rate of the seeds is a bit slow and takes about 30 days. Rhubarb is rich in vitamins (B and C) and minerals. However, its leaves, which are very rich in oxalic acids, are toxic.
