The ArtichokeCynara scolymus – from the Asteraceae family is a thistle cultivated as a vegetable for its floral bud. When steamed and served with vinaigrette or mayonnaise, an artichoke's bracts and floral receptacle offer a subtle flavour. Remember that the bracts are the leaves of the artichoke, while the floral receptacle is the bottom part. Small artichokes like the Violet de Provence are better prepared in marinades. The plant grows up to 2m (7ft) tall, and its flowers form large blue to violet thistles. Very easy to grow, it dislikes frost and humidity. Rich in vitamin B9, the Artichoke helps to stimulate the liver and aids digestive functions.
