Parsnips - Pastinaca sativa - of the Apiaceae family, also called Queen Weed, is an ancient vegetable cultivated since the Middle Ages for its fleshy taproot. Generally white to ivory in colour, it closely resembles carrots and develops a delicate fragrance that delights us raw or cooked. When cooked, it is consumed in a similar way to potatoes. The seeds are sown in the ground from March and harvested as needed from July to October. Parsnips have diuretic and anti-rheumatic properties, and contain vitamins C and B and minerals.
