Squashes, which include Pumpkins, Butternut Squash, and 'Musquee de Provence' Squash, are appreciated for their orange, green, or white colour. Sometimes called "Pumpkin," winter squashes belong to the Cucurbitaceae family. 'Jack O'Lantern', Turban Squash, 'Red Kuri' Squash… all these organic varieties are derived from organic farming and obtained without pesticides or chemical fertilizers. This running vegetable-fruit, often large in size, is planted in the vegetable garden when frost is no longer a concern. Harvested in autumn, they store well. The flesh and seeds provide vegetable proteins and vitamins for the whole winter.
