The Fennel - Foeniculum vulgare - is a vegetable cultivated for its pearly white bulb. It is a set of interlocking stalks. with an aniseed flavour for its finely cut leaves or seeds. Its beautiful colour is due to early hilling. This rather delicate vegetable plant is a poor companion and only gets along with celery. It can be sown from April to July in a nursery or place. The Fennel appreciates humiferous soils in the sun. Harvest generally occurs two to three months after sowing, depending on the varieties: Selma, Cristal Florence Sweet Fennel, etc. Fennel is known for its digestive and hypotensive properties.
