The Savoy Cabbage - Brassica oleracea var. Sabauda – from the Brassicaceae family is a species of cabbage cultivated for its leaves. It is a compact cabbage with a crown of deeply crinkled leaves, similar to the Savoy Cabbage Gros des Vertus. This ancient vegetable, often associated with winter, is very hardy; its seeds are usually sown in spring for a harvest in autumn and early winter. Low in calories, it is rich in vitamins – C and B6 in particular – as well as in fibres and minerals such as calcium.
