Cucumber is a fleshy fruit related to the gherkin pickle and consumed as a summer vegetable for its refreshing character. Filled with water, the cultivation of its plants requires abundant sunlight and watering. This vegetable, native to India, is easy to grow. Planting in open ground is done from mid-May to June, when the soil is well warmed up after the last frost. Space your plants 60cm (24in) apart in all directions. It is harvested in summer and enjoyed raw for its crunchiness, sometimes cooked. Low in calories but rich in vitamins and minerals, Cucumber is reputed to be a powerful antioxidant and thirst-quencher.
