Endive is a variety of cultivated wild Chicory known as the Witloof Chicory. This winter vegetable with a taproot is uprooted, prepared, and then replanted in darkness. This is called forcing. This is how the Endive obtains its beautiful pearly white colour. Widely cultivated in Belgium and Northern France, it is commonly called Chicon there. Renowned for its freshness and slight bitterness, Endive is sown in May and June and transplanted when it has reached 7 to 8 leaves. It is harvested from January to March. Break it off at the level of the neck to obtain a second harvest.
