Spinach - Spinachia oleracea - is a vegetable plant cultivated for its dark green leaves. Spinach seeds are sown from March to May for a summer harvest and from mid-August to October for a winter harvest. Excessive heat causes them to quickly go to seed, so cultivate your plants in partial shade. This vegetable prefers cool and humid climates.
