The Sweet Potato (Ipomoea batatas) is a perennial vegetable plant cultivated for its tuber, although its ornamental foliage gives the garden a tropical touch. It is an ipomoea native to South and Central America. In cuisine, the Sweet Potato lends itself to the same culinary variations as the Potato with which it is often compared. In the vegetable garden, it prefers loose, slightly sandy, well-drained soil. New varieties like 'Orleans' and 'Evangeline' in plug plants can be planted from April to June, in open ground, under shelter or in pots, depending on the climate. They are suitable for cultivation regions where the harvest takes place from September to November.
