The String Bean - Phaseolus vulgaris - is a green bean harvested very young while its pod is still very tender. At this stage, it must be picked every 2 to 3 days to preserve its characteristic flavour. The pods are then very thin and referred to as Extra-Fine Beans. The bean then starts to develop strings and the pod becomes tougher. Recent varieties of String Beans no longer produce strings thanks to cross-breeding with Snap Peas.
