The Jerusalem artichoke or Sunchoke - Helianthus tuberosus - is very easy to grow from its medium and large tubers, planted in autumn and spring and harvested in autumn. These highly beneficial tubers that taste rather like turnips have a pink or white skin depending on the varietiy and a roughly round to elongated, spindle-like shape. Despite its resemblance to potatoes, it is a cousin of the sunflower, as evidenced by its yellow flowers in autumn.
