Description

The Apple tree 'Calville Rouge d'Hiver' is a very floriferous and fertile variety. This apple is not lacking in personality. The blood-red skin contains a tender and juicy pink flesh almost to the core. The flavour evokes musky notes, it is only slightly acidic, and the most delicate palates will appreciate it. The harvest takes place quite late; for good fruit preservation, one must wait for the complete fruit to be completely ripe, which occurs in late November or even later in some years.

The apple tree is native to Europe. The 'Calville Rouge d'Hiver' Apple is an old variety whose origin remains very uncertain. Nevertheless, it has proven itself and enthusiasts continue to appreciate it despite a decrease in its production. Like the majority of apple trees, 'Calville Rouge d'Hiver' requires the proximity of a pollinator. Since its flowering is late, we recommend 'Reine des Reinettes' or 'Golden delicious'.

Our 'Calville Rouge d'Hiver' apple trees are shaped like goblets, which suits them well. The harvest is quite easy, but they will take up space on the ground. They have regular and significant productivity, so it will be necessary to thin out the clusters of young fruits to prevent diseases and improve their size. The white and late flowering occurs around mid-April. The tree is very hardy and the flowering is not afraid of spring frosts. This variety is mainly cultivated in low and medium mountains, it will not tolerate the hot summers of southern Europe. When planting fruit trees, always consider pollination, as many are self-sterile. The Calville Rouge d'Hiver is harvested very late in the season, from late November. It can be stored throughout the rest of the winter without any problems, provided it is fully ripe, the fruits are undamaged and it has a cool and well-ventilated storage location. The garage can make a very good fruit storage place once equipped with wide shelves, but the cellar may be too humid.

Apples from the Calville family are characterised by large ribs that create bumps around the "eye" of the fruit. The Calville Rouge d'Hiver is slightly elongated and conical in shape. The skin turns a beautiful blood-red when fully ripe, while the flesh is pink almost throughout The perfumed and sweet flavour reminds some of musky notes, while others perceive a raspberry aroma. These apples are particularly good for eating fresh. They are less interesting when cooked, although when cooked with the skin, they make a nicely pink compote. On the other hand, when sliced thinly, they are a perfect decoration for refined desserts.

Planting and care

Choose a sunny spot for your 'Calville Rouge d'Hiver' Apple tree. The soil can be slightly alkaline or acidic but not excessively so. Dig a wide planting hole at least 3 times the volume of the root ball. Simultaneously add organic matter (topsoil, compost) and a base fertiliser such as crushed horn. Do not bury the graft collar. Stake if necessary. Water generously at the time of planting, even in winter, and even if it rains. Fruit trees are ideally planted between October and November, outside of frost periods. Container-grown plants can be planted all year round except during periods of high heat or frost.

In winter you can add a small handful of wood ash, rich in potash, to improve fruiting. Watch out for possible aphid attacks during the season. A white powdery coating due to a fungus, powdery mildew, may appear on the leaves in summer, but it does not harm fruit development in gardens. Harvest takes place in late November or even later, so be patient because if picked too early, the fruits are less interesting in terms of their aromatic palette and, more importantly, they will not keep well. To know if they are ripe, when picking, a simple twist of the wrist should detach the stem from the branch, and once opened, the apple should reveal very black seeds. Do not keep fruits fallen on the ground. Apples should be stored with the stem downwards, on shelves or in crates. Choose a preferably completely dark, dry, and cool place, but frost-free.

Care

Pruning instructions The pruning of your apple tree can be limited to simply thinning out dead or interfering branches at the end of winter, in March. During the first 2 years, you can also promote the main branches of the goblet structure by removing low branches that will appear at the base and by cutting back half of the year's shoots. In any case, make sure to leave some spaces in the tree's structure for good air circulation and light. Once the fruits have formed, it will be necessary to thin them out, otherwise a good portion of the upcoming harvest may rot and the fruits will be very small. To do this, remove those that are already smaller than the others, keeping only one or two fruits per cluster, and don't hesitate to significantly reduce the number of apples if there are many.
Pruning Pruning recommended once a year
