String Beans - Phaseolus vulgaris -  are green beans harvested very young while their pods are still very tender. At that stage, they should be harvested every 2 to 3 days to retain their characteristic flavour.The pods are then very fine and are called Extra-fine Beans. Beyond that stage of development, String Beans begin to produce filaments and the pods become parchment-like. Recent varieties of String Beans no longer produce filaments thanks to their cross-breeding with Mangetout Beans
