Perennial basil is an aromatic plant grown for its fragrant foliage and extended harvest period. Less short-lived than annual basil, it is best cultivated in pots, near the kitchen, on a terrace or in a corner of the vegetable garden reserved for herbs. The leaves can be used fresh in salads, sauces, marinades, stews or herbal teas. It is not very hardy and needs a sunny position, light growing medium and overwintering protected from the cold.
Among the best known, 'Magic Mountain' is sought after for its bushy growth, its purple-tinged stems and its highly fragrant foliage. Anise-scented perennial basil has a fresher scent, interesting in cooking as well as in infusions. Russian perennial basil is valued for its vigour and the uniformity of its production.
