4 seeds germinated out of a dozen sown... is this scorching summer responsible for it? sown in a pot, I took care of them and watered them. 3 remaining young plants transplanted did not survive... I will start earlier next year with the remaining seeds.

Korean mint, also known as Agastache rugosa, is a hardy, herbaceous perennial that grows to about 70 cm in height. It is grown for its attractive blooms and for its medium-sized, oval leaves that smell like liquorice mint. Delicious fresh, finely chopped on salads, as herbal tea or in fish sauce. Sow from February to April and harvest 3 months later.

Description

Korean mint, also known as Agastache rugosa, is a hardy, herbaceous perennial that grows to about 70 cm in height. It is grown for its attractive blooms and for its medium-sized, oval leaves that smell like liquorice mint. Delicious fresh, finely chopped on salads, as herbal tea or in fish sauce. Sow from February to April and harvest 3 months later.

Agastache rugosa is native to China and Korea. First introduced in Europe for its attractive, melliferous blooms, it quickly became used as a condiment thanks to its wonderful aniseed/liquorice mint flavour.

Korean mint benefits from a dose of well-rotted compost (2 kg/m²) in late autumn or early spring.

Harvesting: pick the leaves when required, between May and October.

Preservation: the leaves will keep for a few days in a glass of water in the refrigerator. They can also be dried and stored in a sealed jar. 

Good to know: Weed and hoe regularly. Pinch the flowering stems to encourage the development of new shoots.

Planting and care

Sowing:

Sown in a seed tray filled with fine soil from February onwards, in a warm, bright place. Temperatures must exceed 15°C. When the plants have 2 to 4 leaves, transplant them into pots and put them in a warm place, such as a cold frame, greenhouse or polytunnel. They can be moved into their final position when frosts are no longer a concern, spaced about 30 cm apart.

Agastache is hardy and not prone to disease.
