Description

Savory is an herbaceous annual plant used for seasoning, ornamentation, and aromatics, reaching a height of 20 to 40 cm (8 to 16in). It repels insects and parasites in the vegetable garden. Cultivated for its foliage, which is used fresh or dried to flavour stews, grills, soups, meats, and in infusions. Sowing from April to May, for harvest 3 months later.

Naturally growing in low mountains and on limestone hills, Savory is a typical aromatic plant in southern French cuisine. It belongs to the Lamiaceae family and produces beautiful white flowers from July to September.

Satujera hortensis is an annual species that has larger and softer leaves than Satureja montana, its perennial cousin. It has the advantage of growing faster.

In cooking, this Provencal herb with its spicy and slightly bitter flavour is used as a condiment to flavour many dishes. Consumed as an infusion, it aids digestion and relieves bloating. Its leaves can also be used fresh in poultices to soothe skin irritations such as insect bites.

It is a low-maintenance plant that thrives in sunny and dry, well-drained soil.

Harvest: The leaves are harvested from June to October by simply cutting the stems. It is preferable to do this before flowering to preserve the fullness of its fragrance.

Preservation: Savory keeps very well once dried.

Gardener's tip: In the garden, don't hesitate to mix genres by planting some aromatic plants like Savory in the middle of your perennial flower beds or even in rockeries. It's very beautiful, and the sometimes strong scents of aromatic plants often have the ability to repel insects that may attack more delicate plants like certain roses.

Planting and care

Sowing

Sowing is done directly in the ground, in well-prepared light soil, from April to May.

When the young plants are well-developed, thin them out if necessary, keeping only one plant every 15 cm (6in)... and beware of slugs!

Cultivation

It is a low-maintenance plant that thrives in full sun, even in scorching conditions, and in dry and well-drained soil. In heavy, water-retaining soil, don't hesitate to plant it on a mound and mix in some gravel with the soil.
