Description

Rosmarinus officinalis - Rosemary - is an aromatic herb that grows in the form of an undershrub with evergreen leaves. It is indispensable in cooking to add flavour to grilled dishes, sauces etc. It is sown from April to May for a first harvest one year later.

Rosemary was used in the past as incense in churches. It has been used since ancient times in cooking and as a medicinal plant. Fresh or dried leaves are used to flavour stews, fish, poultry, game, vegetables and pasta. They also have antiseptic, bactericidal, digestive and tonic properties.

Rosemary is undemanding. It likes arid and rocky soils, in the sun. It requires no maintenance except for occasional pruning to maintain a nice compact habit.

It will easily find its place in the garden, but also in a pot on the balcony or terrace, alongside other herbs such as savoury or thyme.

 

Harvest: The leaves are harvested from April to October by simply cutting the branches.

Storage: Dry the branches in the shade and store them in a dry place.

Gardener's tip: Carry out regular weeding and hoeing. Rosemary is said to have the ability to repel carrot flies.

Planting and care

Sowing

Seeds are sown from April to June, preferably in poor soil. Transplant seedlings in a nursery, leaving a space of 10 cm (4in) in all directions. Plant them outdoors the following spring, spacing them 1m (3ft) apart.

Maintenance

Maintenance of this plant is limited to a bit of hoeing and weeding. Only water in case of severe drought. In case of severe cold, protect the base of the plant with straw or dry leaves.
