Description

Common Sage is a perennial shrubby plant, used as a condiment, medicine and aromatic herb, reaching a height of 40 to 60cm (16 to 24in). It is a plant with stimulating properties, cultivated for its foliage which is used fresh or dried to flavor stews, grills, soups, meats and also for infusion. Sow from April to May for a first harvest one year later.

The medicinal virtues of Sage have been known since Antiquity. The Greeks and Romans used it against snakebites. The Egyptians appreciated its virtues for embalming their deceased.

Fresh or dried leaves are used to flavour stews, fish, poultry, game, vegetables and pasta. They have antiseptic, bactericidal, digestive and tonic properties. Sage contains an essential oil.

Sage is easy to grow, it requires a supply of well-decomposed compost (3 kg/m²) in late autumn or early spring.

Harvest: Leaves are harvested from April to October by simply cutting the branches.

Storage: Dry the branches in the shade and store them in a dry place.

Gardener's tip: Proceed with regular weeding and hoeing.

Planting and care

Sowing

Sow by broadcasting or in rows 80 cm (32in) apart. Thin out the young plants when they reach 10cm (4in) and keep one every 40cm (16in).
